Recipe: Chicken Stuffed Avocado

You can trust me when I say that this is probably the easiest thing ever to make. I myself am not a gourmet chef by any means, but I wish I was! This recipe is really just a few simple steps, but the result is a super delicious and very filling meal! This is hardly a recipe, more like a few instructions, but I figured I would share with you all anyways because it’s one of my favorite meals!

What You’ll Need:

  • 1 large Hass avocado
  • 1 can (4.5 oz.) of Swanson White Premium Chunk Chicken Breast
  • Light mayonnaise

Instructions:

  • Use a knife to cut the avocado in half, throw away the pit, and place both halves in a bowl or on a plate.
  • Open the can of Swanson White Premium Chunk Chicken Breast and drain the water into the sink.
  • Once you have drained the can of water, fill it up with water from your sink and repeat the draining process. Do this at least two times, it helps remove some of the sodium from the can.
  • Once you have drained the can of Swanson White Premium Chunk Chicken Breast, dump it into a separate bowl.
  • Grab your mayonnaise of choice (I refer Hellman’s Light Mayonnaise) and scoop 1-2 spoonfuls of mayonnaise into the bowl with the chicken. I sometimes use 1 1/2 spoonfuls of mayonnaise, it just depends on your taste.
  • Mix the chicken and mayonnaise well.
  • Once the mayonnaise and chicken are mixed well, scoop it and stuff it into the hollowed areas of the avocado where the pit was.

After College Tips!

Ever since the beginning of May, when I graduated from Ole Miss, I have been stressing about where my life path will take me. I have been applying to jobs, editing my resume almost weekly for any possible errors, and checking my inbox like it’s my job.

However, I have recently been trying to focus on bettering myself. What do I mean by bettering myself? I mean pushing myself, taking a leap and applying for jobs that I thought I wasn’t good enough for. I mean educating myself, finding out who I am and what’s going on around me, researching jobs, cities, companies, clients, and case studies. This has all been a lot of work but it has been very rewarding.

Today’s blog post includes three websites that have been very helpful for me and I am currently obsessing over.

Educate yourself:

I have been trying to educate myself by subscribing to companies such as GoTidbits and the Skimm and reading up!

GoTidbits is a website with “the inside scoop for the gal about town.” You can choose to subscribe to Tidbits for the inside scoop on a variety of cities such as: Atlanta, Austin, Charlotte, Dallas, Denver, Houston, Minneapolis, Nashville, New Orleans, San Antonio, and San Diego. Or you can subscribe to “everywhere” to learn the inside scoop on all of the listed cities! You can also choose to subscribe to Kidbits! I follow San Antonio Tidbits, Dallas Tidbits, Austin Tidbits, and Houston Tidbits because those are the primary areas that I am looking for jobs. When you subscribe, you will get free Tidbit emails sent to your inbox twice-weekly!

This is a great subscription if you are new to one of the cities listed above, or if you are simply wanting to get more involved! Tidbits has all the inside information about absolutely everything for women, including: local fashion, cuisine, cocktail culture, beauty, and tidbits. There is also TidbitsTreats which provides subscribers with coupons to places around town! Also, Tidbits has a Tastemakers section where Tidbits sits down and has a couple of cocktails with the stars! You can read interviews with people such as Bravo Star Brad Goreski, Lauren Conrad, Tory Burch, Brian Patrick Flynn, Jonathan Adler, and so many more interesting people! Tidbits is also in the process of creating a Social Diary, which is a social calendar with dates for sip and style events. This calendar is perfect for someone who is new in town and wants to meet people, or if you want to score some great deals at local stores!

The Skimm is a free subscription that sends you daily emails Monday-Friday about what is going on in the world. If you’re young or in your early 20s like me, this is a great way to stay in touch with the news. My favorite thing about this subscription is that they do the reading for you, you just have to skim through! No need to go to several different newspaper website, or read through several different newspapers, but who reads newspapers nowadays? Sad, but true. These daily emails are a great thing to read first thing in the morning so that you are caught up and know what’s going on in the world around you.

Today’s Skimm included…

  • A quote of the day, which was from Steve Martin (one of my favorite actors, he is such a precious old man).
  • Lots of information regarding the Islamic extremist group, ISIS, and Iran.
  • The World Cup news – who beat who, what teams are playing today, even a special term called a “hat trick” so that you can impress others in conversation about the World Cup.

Tonight I took a quiz that showcases possible career paths for different personality types from Good Co’s Personality Canvas. My quiz results were surprisingly very accurate! FYI the quiz is completely free, the website is not a scam (that was my first reaction when I saw a link for a personality quiz…which other companies actually charge to see results for).

My Favorite Wedges for Summer 2014

A great wedge is one of my favorite accessories during the summertime. You can change your casual summer dress from a  day outfit to a cute night outfit by dressing it up with a great pair of wedges! You can also wear a colorful top, white skinny jeans, and a pair of wedges for a dinner date.

I particularly like brown wedges (or neutral wedges) as you can tell from the picture below. But there are so many great neutral wedges that have a pop of color!   2. Oscar de la Renta ‘Short Dotted Beaded Tassel Clip-On Earrings’ in ‘Sorbet’ from Neiman Marcus — $241. These earrings are so beautiful and so fun! As usual, I’m talking about tassels on my blog. I just can’t get enough of them!!
  3. Joie ‘A La Plage Nice’ Metallic Thong Sandals in rose gold from Shopbop — $125. These shoes are a perfect example of a classic pair of thong sandals. These sandals come in several different colors and are perfect to pair with any outfit!
  4. The ‘Bella Flamingo Raffia Clutch’ by Elaine Turner — $178. This bright pink clutch is made out of beach grass raffia with a genuine leather trim. This Elaine Turner clutch is perfect for this summer. I imagine pairing it with white jeans, wedges, a colorful top, and colorful/gold jewelry.

Beauty: My Recent Favorite Products

Today I went to Ulta for two things: Urban Decay Eyeshadow in ‘Foxy’ and bareMinerals Original Foundation in ‘Medium Beige.’ However, I left with only one item on my To-Buy List (unfortunately they were out of the eyeshadow I needed). Although, I did leave with three other items that were not on my list, because isn’t that what you’re supposed to do when you go shopping? Buy things you don’t need, or at least that you think you didn’t need.

I ended up buying Essie Quick-E Drying Drops Solution, bareMinerals Redness Remedy, and bareMinerals Multi-Wrinkle Repair (pictured below).

I am now in LOVE with these products!

Essie Quick-E Drying Drops Solution helps your nail polish dry fast, protects polish from smudges, dents, or scratches, and is easy to apply! Essie also makes several other quick-e solutions for stronger nails, shine, and more! You can get them all at your local drugstore. I used these drops after painting my nails and I went to bed 30 minutes later and when I woke up I didn’t have any “sheet smears”!! I usually never paint my fingernails because I always end up messing them up, but now I can save so much money on manicures and do it myself at home! Thanks to Essie Quick-E Drying Drops Solution!!

I have only been using these two bareMinerals products for a couple of days now so I don’t have any major result reviews for y’all yet, but I can tell you what I like so far!

The bareMinerals Redness Remedy helps reduce facial redness on contact and over time. It is powered by the bareMinerals ActiveSoil Complex, which instantly minimizes the appearance of broken capillaries and brightens skin for a healthy-looking, more even-toned complexion. The Redness Remedy also comes with a antibacterial-treated Soothing Compress Brush that is super soft! If you use other bareMinerals products, then I can tell you that it is very similar to the bareMinerals foundation. It is a powder that you tap into the lid and swirl around, similar to other bareMinerals products. When you dispense it in the lid it has a yellowy color to it, but it does not look yellow on your skin! It is a very light product, it does not feel greasy or anything negative. After using it a couple of times, so far, I have noticed that it instantly reduces the redness on my face. I wouldn’t say that I have rosacea by any means, but whenever I work out I get very red, like I would be humiliated to see someone I know after a workout. So I’m hoping that this remedy helps with that over time.

The bareMinerals Multi-Wrinkle Repair helps diminish the appearance of forehead wrinkles, brow furrows, crow’s feet, and frown lines. What’s In My Purse?

As we all know, a woman’s purse is a secret haven. It seems like women store everything that one could possibly need within the hidden walls of their purse. Whether it’s a Band-Aid, brush, the perfect lip gloss, or a snack, women have what they need at all times.

In my purse, I carry my basic necessities. I always have to have a good chapstick and lip gloss. Today I was carrying several types! It’s an absolute must for me to carry around my comb, if you know me — you know my hair is pretty much always perfectly in place. That wouldn’t be possible if I didn’t touch it up every now and then throughout the day! During these cold months (yes it’s still a little chilly sometimes here in Oxford, yes I know it’s almost May) it’s also essential to moisturize! I choose to moisturize my hands with Lubriderm Advanced Therapy Lotion, it’s non-greasy and smells good too! And for whenever the sun does decide to come out, I’m prepared to block the sun with my Tory Burch Aviators, and protect my neck from sweat with this fun cheetah print hair tie.

Beauty: My Recent Makeup Favorites

What I love about makeup is that there’s always something new happening. Whether it’s a new color, new trend, or new product there’s always something fun and pretty happening in the makeup world. These are my recent favorite makeup items that I have been using.

  • Laura Mercier ‘Flawless Skin Repair Eye Serum.’ This eye serum is great because it improves the appearance of lines or wrinkles while at the same time brightening up your eyes! Also, the Arnica Extra and caffeine in this eye serum reduces the appearance of dark circles. All you need to use is the tiniest drop from the pump on each eye. I bought my first bottle of this eye serum last May and I use it all the time and there’s still plenty left! You can find this amazing eye serum at Sephora.com.
  • ‘Erase Paste’ by Benefit Cosmetics. This concealer is great for under the eyes or any blemishes on your face. It brightens areas of your face while at the same time covering your areas of concern. Erase Paste comes in three different shades: fair, medium, and deep. This concealer is truly incredible.   • ‘They’re Real!’ Mascara by Benefit Cosmetics. This mascara is amazing! this mascara lengthens, adds volumes, curls, lifts, and separates your lashes. My lashes instantly looked longer after using this mascara. Just trust me, you need this mascara. And you can find it at Sephora.com.
  • Chella Highlighter Pencil in ‘Ivory Lace.’ I received this highlighter pencil in my Birchbox and instantly fell in love. This highlighter brightens up your face and makes you glow. This pencil conceals, brightens, contours, shapes, lines, and defines your face. You can use it to brighten your brow bones, water lines, eye areas, nose, cheekbones, and Cupid’s bow. The Pros & Pros of Birchbox

Yes, yes I know, technically this should be titled “The Pros & Cons of Birchbox” but there aren’t any cons! Really! I signed up and received my first Birchbox in September. I have received several Birchboxes since then and I have loved every one of them!

I highly recommend getting a Birchbox because it is a fun and easy way to try new beauty products! Personally I don’t always have time to search through magazines and websites to find the latest and greatest beauty products. And frankly, not everyone has heard of some of the products — a lot of the products are new! Birchbox provides you with sample-sized products to try and eventually love! If you love what they send you, you can go to their website and buy the full-sized product!

Like I said before, I have received several Birchboxes so far. And so far, I have LOVED everything! Some of my favorite items that they have sent me are facial masks, leave-in conditioners, perfume, and lip gloss! I have bought one full-sized item from Birchbox and that was the Folle de Joie fragrance by Joie, which I adore. I spray it on my bed sometimes before I go to sleep because it seriously smells that good.

DIY: Puff Paint Painting

I was inspired to create this puff paint painting when I stumbled upon the Virginia and Charlie Blog via Pinterest (link below)

On the Virginia and Charlie Blog, she used a white canvas with a white design. I absolutely loved this design, I’m a sucker for all white as well as neutrals. However, my room has a bit more pink in it and I decided to try and make this project my own. I used white and red acrylic paint until I found the pink that matched my pillows. I paired my canvas with gold puff paint because I’m obsessed with anything that’s gold.

DIY Puff Painting

What You’ll Need:

  • A canvas (you can choose any size you like!)
  • Wax paper
  • Mod Podge (you can get this at your local craft store or Wal-Mart)
  • Puff Paint (you choose your color!)
  • Acrylic Paint (you choose your color!)
  • A paint brush (for acrylic paint)
  • A foam brush (for Mod Podge)
  • A plastic cup (to pour your Mod Podge in)
  • A piece of blank computer paper
  • A pencil

Step 1: Create a design — I copied the design I found on the Virginia & Charlie Blog. Draw your design with a pencil onto your piece of blank computer paper. You can create any design you want! I would recommend keeping it fairly less-complicated.

Step 2: Once you have drawn your design onto your computer paper, place a large piece of wax paper over your computer paper and, with your pencil, trace your design onto the wax paper.

Step 3: After you have traced your design onto your wax paper, get your puff paint ready! I made sure I had a small dry paper towel and a slightly damp paper towel just in case there was any mess-ups! Puff paint tends to splatter or “burp” sometimes…and I am a crazy, huge perfectionist. Trace your pencil marks on your wax paper with your puff paint let it dry! The puff paint needs quite some time to dry, especially if you made your lines thick. Which FYI draw your lines pretty thick! Thin lines are hard to peel off and sometimes break (you’ll find out).

Step 4: While you’re letting your puff paint dry, you can mix up your acrylic paint (if you’re using two colors) to pick out the color you want to paint your canvas. Once you have your color, paint your canvas, then let it dry…this will take a while. You can paint your canvas any color, even a pattern! Get creative!!

Step 5: This is the fun part…at least for me it was, I’m as easily entertained as a child. Once your puff paint is completely dry (you can lightly touch the edges to see if it’s dry) peel your puff paint design off of the wax paper and place it onto your canvas (once your canvas is completely dry). Place your puff paint design where you want it to be on your canvas.

Step 6: Once you have placed your design in its proper place on your canvas, pour your Mod Podge into a small plastic cup so that it’s easier to dip your foam brush into. Then, dip your foam brush into your Mod Podge, pick up one of your puff paint designs, paint a thin layer of Mod Podge onto your canvas, and then place your puff paint design onto the wet area. Repeat this glueing process until your design is completely glued onto your canvas! Then wait for it to dry. Once my entire die sign was completely dry, I planted over it with a thin layer of Mod Podge so that it would all stay in place!
